Black Bean and Turkey Casserole 

1 Spaghetti Squash

1 Can of black beans (rinsed and drained)

1 lb lean turkey meat

1 Packet of taco seasoning

1 Jalapeno

10 Baby tomatoes

1 Jar Trader Joes Enchilada Sauce

Olive Oil

Salt and Pepper

1) Preheat oven to 425

2) Halve Spaghetti Squash and rub 1 tablespoon olive oil over each half. Sprinkle with salt and pepper and place seeds down on a baking sheet.

3)  Bake for 45 Minutes or until squash is tender and noodles can easily be scraped out.

4) While the squash is cooking, heat 1 tablespoon olive oil over medium heat.  Add jalapeno and tomatoes and cook until tender ( about 6 minutes)

5) Add the turkey meat to the mix and cook until brown.  Drain if needed.

6) Add taco seasoning + 1/2 Cup and cook until all the water is absorbed.

 7) Mix in the black beans and enchilada sauce and simmer for 10 minutes.

8) Discard the seeds of the spaghetti squash and scrap out the noodles (should resemble spaghetti noodles)

9) Mix the noddles with the sauce and pour back into the hollow squash bowls.

10) Top with low fat or vegan cheese and place back in the oven until the cheese is melted.

11. Top with your favorite items (cilantro, sour cream, avocado, etc.

Sweet Potato Hash with Sausage and eggs

What you will need

 

2 Medium Sweet potatoes (peeled and diced)

1 Medium white onion (diced)

1 lb Chicken Sausage 

4 Eggs

Coconut oil

Rosemary

Salt

Pepper

Prep: 

​

Preheat oven to 425

​

1) Brown sausage, transfer to plate

2) Reduce heat to medium high, add 1 TBSP coconut oil to cast iron skillet and saute onions until translucent.  Transfer to plate with the sausage.

3) Heat 1 TBSP coconut oil over medium high heat, add chopped sweet potatoes and cook, stirring occasionally, until tender (about 10 minutes). Sprinkle some rosemary over sweet potatoes. Cover skillet with a lid while cooking.

4) Add sausage and onions to skillet and stir.

5) Crack four eggs over hash.  Place skillet in oven and cook for about 10-15 minutes.
